Certain unacceptable ingredients may be hidden under the  name of natural flavorings. Modified food starch is also a vague term which does not indicate the source of the starch (wheat or corn). Heavy Metal Exposures, Developmental Milestones, and Physical Symptoms in Children with Autism
Many different possible sources of exposure to heavy metals were considered.  Among those found to be statistically significant included seafood.  Maternal consumption of more than 2 servings per month was found  to be a risk factor for ASD.   This was true of 57% of the mothers of children with ASD, vs. 33% of the controls.

Nearly all fish and shellfish contain traces of mercury. For most people, the risk from mercury by eating fish and shellfish is not a health concern. Yet, some fish and shellfish contain higher levels of mercury that may harm an unborn baby or young child's developing nervous system. The risks from mercury in fish and shellfish depend on the amount of fish and shellfish eaten and the levels of mercury in the fish and shellfish. Therefore, the Food and Drug Administration (FDA) and the Environmental Protection Agency (EPA) are advising women who may become pregnant, pregnant women, nursing mothers, and young children to avoid some types of fish and eat fish and shellfish that are lower in mercury.

Meats  & Poultry  

Fresh meat, fresh poultry, fresh fish, fresh shellfish and fresh game are gluten free and casein free. However, the meat that is most likely to be gluten free and casein free are the meats that are purchased fresh from the meat department, butcher or health food store.

Be aware of meats that are prepackaged either fresh or frozen, as they may have added ingredients that are not acceptable.  Some prepackaged meat may contain gluten and/or casein as a binder.  

Check all labels carefully and if you have any doubt, ask to speak to the manager or supervisor of the Meat
Department.  Many restaurants put butter on steaks after they have been grilled to add extra flavor.  The butter is not visible after it melts.  Don’t assume that the waiter will always give you an accurate answer when dining out.  Ask to speak with the manager or chef of the restaurant to make sure food is prepared without gluten or casein.
Wheat flour is sometimes flavored and shaped to look like beef, pork, and shrimp, especially in Asian dishes.   

NOTE: Recent studies indicate that tuna contains unacceptable levels of mercury.  Although many canned tuna products do not contain any gluten or casein ingredients, we are no longer listing tuna fish as acceptable.  For more information see the Autism Research Institute’s website and read  “Mercury and Autism” www.autism.com/ari
